3 chicken tenderloins (sliced)

1/2 avocado (cut into bite-sized pieces)

Coconut milk (unsweetened): 200ml

Water: 200ml

6 cherry tomatoes (cut in half)

1/2 zucchini (thinly sliced)

Lemongrass (fresh, dried, or paste): 1 stick or 1 teaspoon

2-3 slices of ginger

Garlic (grated): 1/2 teaspoon

Fish sauce: 1 teaspoon

Lemon or lime juice: 1 tablespoon (or more to taste)

Olive oil: 1 teaspoon (for frying)

Salt: appropriate amount

Chili pepper (sliced or paste): a little (to taste)

Coriander or basil: appropriate amount (if available)
How to make it

Heat olive oil in a pot to bring out the aroma , and lightly fry the ginger, garlic, and lemongrass to bring out the aroma.

Add the water to make the soup , bring to a boil, then add the chicken breast, zucchini, and cherry tomatoes.

Once the simmered chicken breast is cooked through, add the coconut milk and heat over low heat (be careful not to boil).

Finish by adding fish sauce and lemon juice to taste, then turn off the heat and add the avocado .

Place on a serving dish and top with cilantro, basil, and chili peppers.
